Salami and Pepperoni Quesadillas

Anyone love calzones?!?  I sure do, but I don’t like the fact that they have so much bread around them.  I’ve substituted the extra bread with using flour tortillas.  Less bread and still as good!!

A quick dinner that’s simple enough for anyone to make!!

So I call them Salami and Pepperoni Quesadillas!!

What you need:

salami-sliced thin
1/2 cup ricotta cheese-use as much or as little as you want
marinara sauce to dip

I am fortunate enough to have a Quesadilla maker, so that saves me time!

You can purchase one here.

So while I’ve got my quesadilla maker warming up, I slice up the salami and dice up the pepperoni.  Once that is done, you will need to layer the meat and ricotta cheese onto one quesadilla until you have enough filling.  Usually I start off with the salami, then add ricotta cheese, and then add the diced up pepperoni on top of the cheese.

Place the other quesadilla on top of the meat and cheese mixture and place in quesadilla maker and cook for approximately 8-12 minutes or until quesadilla is browned.

Serve with marinara sauce.
