Cucumber Dip

Cucumber Dip
Ingredients:
1 English cucumber, or 2 regular cucumbers
(peeled, seeds removed and chopped into small chunks)
1 pkg. (8oz.) 1/3 less fat cream cheese, softened
1 cup reduced fat mayo (I like the olive oil kind)
1 Tbsp. lemon juice
1 Tbsp. dried dill weed
1/8-1/4 tsp. cayenne
Instructions:
Place all ingredients but the cucumbers in a food processor mix until smooth and combined. Stir in cucumbers. Best if made the night before. Serve with crackers.
