Any coconut lovers out there?  This is the dessert for you!

This is such an easy dessert to make!  This pie makes it’s own crust and it tastes like a custard.  You can eat it warm right out of the oven or cold.

Mom’s Impossible Pie

My mother’s recipe….a family favorite!

This pie makes it’s own crust-so no need to make one or buy one!

Ingredients:

4 eggs, beaten

1/2 cup self rising flour

1 tbsp pure vanilla extract

1 (7 oz) pkg of coconut flakes

1 & 3/4 cup sugar

2 cups milk

1/2 stick of butter/margarine

Instructions:

Beat eggs in a bowl.

Mix sugar and flour in another bowl then add to the egg mixture.

Add all other ingredients and stir.

Put in a 9″ greased baking pan and bake at 350 degrees for 30-35 minutes.

That’s it…easy-peasy!!

I cut them into squares-makes 8 squares per batch.

Best when served warm-store leftovers in fridge!
